PROGRESS UPDATE
A goal of wendy on their 101 Things in 1001 Days list with a status of Done.
 
1. Proscciutto Mozzarella & Fig Pizza (Lorraine Pascale) - well actually Salami, mozzarella and mushroom Pizza because that's what we had in the fridge.
2. Pannacotta - I forgot this was on my list (I didn't make the couli that was meant to go with it) so adding it now.
3. Brown Rice, Carrot and Cashew Pilau - From the Guardian food pages, quick, easy and tasty.
4. Morrocan Stew with Minted Couscous - it was supposed to be vegetable stew but it became chicken stew because we didn't have courgette or butternut squash so I just added extra carrots and chicken.
5. Pork Sausage, Soya Bean & Tomato Casserole - Made with Crabeye beans as we didn't have soya, also tinned beans rather than dried because it took long enough to make without all that extra bean soaking and boiling time.
6. Sausage and Mushroom Crumble - very tasty, would definitely cook again, perhaps adding more tomato as I could have done with a bit more gravy.
7. Butternut Squash and Coconut Stew - very tasty, would make again, though suspect a little chilli would improve it.

30. Kirla Ghassi (bamboo shoots in coconut milk) - tasty curry, served with lentil and couscous from further up the list. Could do with a little more spice and a little more tamarind. (Tamarind and toasted coconut are a delicious combination!)

There a bunch of things that were orginally on my list that are in recipe books at the wrong end of the country. So I've allowed myself to substitute recipes from the two Lorraine Pascale books that I've left at my parents for recipes from the two of her books that I have here in Inverness.

2. Morrocan Stew with Minted Couscous - it was supposed to be vegetable stew but it became chicken stew because we didn't have courgette or butternut squash so I just added extra carrots and chicken.
